Fermentation is the old term used for oxidation. Fermentation does not actually take place when processing tea, as no alcohol is produced. Green tea is processed by steaming or heating (pan firing). This makes the polyphenol oxidase inactive at the very outset, and no oxidation occurs. This is the reason green tea is rich in polyphenols (catechins).
